Hi there.

First post on the forum. Very excited to be a part of the kind diet/kind life world. :)

Anyway, I was wondering if bean dishes can be frozen (such as the pinto bean stew and the black soybean & kabocha squash stew). The recipes make a pretty good amount and, while I love them, it's hard to eat the whole batch myself (only veg in the house).

TIA!

I made the Azuki beans and kabocha squash dish and froze the leftovers in containers (1 serving size each) for future meals and they tasted the same after I defrosted them overnight. I moved the container from the freezer back to the regrigerator overnight. Make sure your containers have good seals, I used the ones from Costco that have rubber/lock to seal food. Hope this helps.

Thanks so much for your reply and advice. Much appreciated!

I actually will be making the Azuki bean/kabocha squash dish tomorrow and look forward to trying it -- and freezing some for future meals! :)
