I just made a great chili. 1 box, Veggie stock Whatever veggies you like (I used carrots, celery, red, yellow, and green onions, kombu seaweed, fresh garlic) lots of chili powder black pepper I soaked kidney beans over night, then added canned white and black beans as well.
SO YUMMY! My family loves it, even the meat eaters :)
I really like the kobacha squash and adzuki bean recipe from TKD and varry it to my taste as well.
I make a HUGE batch of soup every week and eat it 1-2 times per day along with 1/2 cup of quinoa or brown rice. Its easy to pack up and take on the go too.
You can make bean burgers too, yum! Look at vegcooking.com or vegetariantimes.com. I make a yummy burger by adding a can of refried beans to a package of Seitanbacher brand veggie burger mix, and some extra vital wheat gluten flour, adjust the seasonings and liquids. Just make patties and grill in a cast iron pan! so good...
