I found a wonderful recipe in The Concious Cook; This is my version using Trader Joe's Coconut milk because I live near one but the coconut milk is light and the original recipe called for regular. 2 cans coconut milk 1/2 cup tapioca 1/2 cup organic sugar 1/2 tsp salt Let it sit a few minutes then cook it until it comes to a full boil and then maybe 5 minutes after that. It varies depending on the type of tapioca. Take it off the stove and add 1 tsp vanilla and let it cool Yum!
