Superhero Mamas?

I am trying to do the SuperHero thing but am finding this to be a harder transition than going vegan. Mostly because I am having to make 2 separate meals everyday for the kids/husband. What do all of you Superhero Mamas out there eat? I am really looking for fast and easy meal ideas that I can maybe prepare in advance (like on a Sunday) and throw together throughout the week. Any meal would be helpful, breakfast lunch or dinner. THANKS! Kiran
Hi Kiran,I find that making a big batch of grains and beans really helps me. I think it's a good idea to stock up on some greens and wash them before throwing in the fridge. That way you can have some quick throw together meals. One of my favorite breakfast meals is some rice, fresh almond milk, nuts, and dried fruit all warmed up. Good luck.

I make a big thing of rice and beans and whole grain pasta at the beginning of the week. I also keep cut up veggies in the fridge at kids reach for snacks. I end up doing a combo of offering whatever we are having for dinner to the kids and then supplementing with the previous cooked grains, veggies and fruit, etc.
My kids are in a daycare/preschool that provides breakfast/lunch and snack. The meals are "wholesome" by most standards but include milk at every meal and of course plenty of meat. I compromise by feeding my kids vegan at home (with the exception of cheese which they love! and I haven't been able to find a acceptable substitute) and accept that the daycare meals are temporary and for now this works.
I have been very very fortunate that my husband has been very flexible. When I originally shared what I wanted to do he offered eat with me at home but if we were out to dinner or at friends, he would eat whatever he wanted. I was more than pleased with such a compromise. We have been eating vegan for about 6 weeks. The first week, I went kinda crazy buying and (trying) to cook all these new foods. It was a disaster! So we went back to basics but just left out the meat and dairy. Then my husband who has always done the bulk of the cooking because he gets home from work before me, started experimenting here and there. And NOW - he makes the very BEST tofu I have ever had!!! This has been a huge surprise considering he is the son of a butcher!!!
So maybe try cooking some staples and then just adding them to your other dishes. And maybe in time your husband and kids will learn to enjoy more and more of the superhero dishes. Good luck and let me know how you make out:-)
Hey Heather the daycares that my kids have attended have either provided soy milk (or whichever milk you prefer) for your kids or have let me bring in a carton every week. Remember the milk and meat they are providing are full of drugs and steroids. My kids are thinner than other kids but not skinny. So many of the kids today LOOK like they are being fed steroids. They either look like giants or they are fat. My girls are in school now (Pre-K and Kindergarten) and both of them are fed vegetarian meals and are given an alternative to milk (One gets juice, one gets soy) and this is public school!!!!! They are actually REQUIRED by law to accommodate our diet and provide a balanced nutritious meal. YAY!!!!
