vital wheat gluten?

Hi everyone,
I'm making a recipe tonight from Veganomicon that calls for vital wheat gluten (the chickpea cutlets, here's the recipe http://www.chow.com/recipes/11364) Is vital wheat gluten the same as vital wheat gluten flour? I'm not sure where to look for the product in the grocery store or what form to use for the recipe. Thank you in advance for your help!
