baking help! babycakes

I'd appreciate any help from bakers out there. I just purchased babycakes cookbook, I can't wait to start. Here's my dilemma. Everything in it is vegan and gluten free. I don't need the gluten free. Does anyone know how to make the recipes use regular/wheat flour. I thought maybe just change the spelt or gluten free flours to regular/wheat flour, then omitting the xantham gum b/c I know that is put in to mimic the gluten in flours. Does anyone know if this would work. I hate to buy the spelt, special gluten free flours, potato starch and fava-bean flours b/c it's just more in my pantry and they are more expensive, but the recipes look soooo good. Any help would be appreciated!!

I know just swapping out the flours would definately work! I usually mix brown rice flour or oat flour with wheat flour and my muffins, breads and pancakes come out yummy! Hope this helps! Happy baking!

Yes. You can leave the xantham gum out. You should be able to make all the recipies just fine by omitting the xanthum gum, spelt, fava, potato starch, and such. That's all added to get the right consistancy without flour. Just leave those out and use whatever regular flour you want and you should be good to go!
