Gingered Adzuki Beans

I love this stirred into Barley & Brown Rice.
4 servings
2 T minced Fresh Ginger
1 T dark Sesame Oil
Heat in skillet over medium heat until ginger begins to sizzle (about 3 minutes)
Add:
2 C cooked Adzuki Beans
2 T Mirin
1 tsp Umeboshi Vinegar
1/2 tsp Sea Salt
Cook over medium-high heat, stirring often, about 3 minutes or until liquid evaporates.
Garnish with chopped green onions (or chives).
This recipe sounds really good! Thank you! I have ginger root- do I just grate the whole thing or do I peel it first?
