amaranth leaves

Hi all!

I picked up some red amaranth leaves today at one of my local asian grocers. Thing is I don't have any recipes for it. If anyone has any I would be very greatful They look so pretty and i don't want them to go to waste!!

Amaranth greens are DELISH! I have some growing organically in my backyard.


Any way you cook them they will turn out great. They're one of those universal dishes that if you try them out they will be delish!


When I first tried amaranth greens I believe I put them into Miso Soup with edamame and some other good items.


You can treat them like spinich....eat them with pasta like broccoli rabe, ...maybe a smoothie...or with tofu for a breakfast scramble or a dinner stir-fry with tofu.
