I'd love to plan a picnic for my hubby, myself, and Shadow (our dog) always comes along. It's usually after we've walked him.
Any and all ideas would be so very appreciated. This would be my first Superhero planned picnic. So excited.
I think modeling your picnic after a Japanese bento box is a good idea. I live in Korea and have gotten really used to Asian style meals that center on vegetables and then incorporate fruits, grains and proteins in smaller portions. The site is great for someone new to bento or just needing ideas: http://justbento.com/recipes. I usually start with The Kind Diet's nori wrap, which kind of replaces a sandwich, or something like that and then maybe have a few Korean side dishes like steamed spinach with garlic or kimchi, but you could do whatever you like. Anyway, Japanese and Korean style lunches are great ways to get picnic inspired and can easily be made superhero.
A grain-based salad such as Kim's Red Radish Tabbouleh (TKD p. 226) along with some greens (I really like steamed kale, radish sprouts, or micro greens with olive oil, umeboshi vinegar, and gomashio - TKD p. 265) would be nice. Both recipes travel well and can be eaten at room temperature. The Crispy Peanut Butter Treats (p.184) can be made superhero style and along with a thermos of herbal tea would be a yummy dessert. Whatever you decide to make, I hope you have fun.
Thank you so much. I think I'll incorporate both your ideas into our picnic.
@ SeoulVeg...bentos are very common here in Hawaii too. Why didn't I think of that? hee hee.
@ Noel...Thank you for including the page numbers for me. Let you all know when we have it and how it turns out?
