Black-eyed Peas Croquettes

Hello. Anyone have some good advice on how to execute these? They look yummy, but after three tries, mine have been unedible. Did anyone else have trouble with this one? All of my other dishes have turned out great.

I made these. Make sure you blend them for a long, long time to ensure that they become a paste so that they stay together. Then be careful when putting them in the oil. They can fall apart easily. They also burn easily so watch them. What was inedible about them?

Thanks Maryann. I will try to blend more. They became inedible after they fell apart (both times) in the oil - resulting in a sort of oil soup. My friend and I didn't want to eat them because there were just so many little pieces. But I am going to try again - these look so good. This is the only recipe I have had trouble with, all others are easy and delicious. Thank you again.

i've tried in a non-stick skillet with very little oil and they still become a big mushy mess.


maryann - you say to blend them to a pulp even though the recipe says not to. then what? do you add any extra binder to the recipe?


they taste good even as a saute mush ball honestly!!
