Going on a 3,000 mile road trip (Well, I'm moving, but I'm trying to make the trip fun).

I've scoured all of the local food markets and only so far come up with nuts and dried fruit to take with us. Any suggestions? I'd like to be able to make this trip without going on a fast-food/red bull binge as so many others have turned out! I certainly don't want to be experiancing any sugar crashes on this drive!

Also, going from the West to East coast on pretty much I-80 the entire ride. Anyone live on/near 80 and have any yummy restaurant recomendations?

I would appriciate any feedback!

If you are going to go through Omaha, Nebraska and have some time to rest, then I definitely recommend going to McFoster's Natural Kind Cafe. It's delicious! All of their food is organic and MOST of their dishes are vegan and/or vegetarian. The place has such a cool vibe and the people are incrediable nice there!
If you're intersted, just google McFoster's Omaha, NE and the site should come up and you can mapquest it too so you can have the directions when you come through! :)
