Hi
I'm very new to the web site and I just recently read The Kind Diet. I'm interested in flirting around with becoming vegetarian but I live in a very small town in southern Indiana. I'm currently in high school and very active in sports, I'm concerned I won't get the right nutrients I need because my lack of resources.
I would love any advice for simple vegetarian meals!
My thoughts exactly! Most teens do not like healthy foods enough to concentrate on getting nutrition, but it sounds like your mind is on the right track. I have been veg since high school and I was a very active ballerina/gymnast. You can do this with no problem!
Don't fill up on empty calories, like breads and chips. Make sure your 'carbs' are whole grains. A really healthful vegan plate of food will be 1/4 grain, 1/4 bean, and 1/2 (you heard me) green veggies. Get your really nutritious foods down before you eat other stuff.
Oatmeal for breakfast, or smoothies made with frozen fruit almond milk and soy milk powder. Amy's burritos (look for the non-dairy ones) are in the freezer section of the grocery store. Big salads with seeds/nuts, dried fruits, Eden brand canned beans, homemade vinaigrette. Brown rice and stir fry veggies with tofu. Look for quinoa, which cooks in 15min but is much more nutritious than many grains and has a nice texture kind of like cous cous.
