No, almond milk will not be thick enough. You need a thick, rich puree. I actually was out of almonds and substituted very thick cashew cream that I had on hand, and it was perfect. Also, this sets up nicely once chilled, not runny like I initially thought.
The video is so sweet. Love the language. I, as a german, can understand it ^^

Today I made the vegan Mayonaise and it was great. It tastes just like "real" Mayonaise.
