ohhhhhh, right. didn't see that there! thanks, french momma! :) could i use almond milk instead of the soaked almonds?

No, almond milk will not be thick enough. You need a thick, rich puree. I actually was out of almonds and substituted very thick cashew cream that I had on hand, and it was perfect. Also, this sets up nicely once chilled, not runny like I initially thought.

Today I made the vegan Mayonaise and it was great. It tastes just like "real" Mayonaise.
