I made the Hot Rice with Tomato and Basil, and had a side of steamed Brusssels Sprouts with Earth Balance "butter" spread. Yum! The only thing it was missing was some protein, but I'm trying to cut down on the processed soy products so I don't know what to add. Maybe some sauteed tofu (since it's less processed?) Any ideas? I'm sick of beans too at the moment...

Hi Jill--

I'm still pretty new at this but everyone says Quinoa is high in protein. I have had it a few times and I absolutely love it. I get sick of beans to every now and then, but I find I can add cannellini to just about andy green and I'm happy. :)

Is the Earth's Best margarine processed soy? I am trying to stay away from overdoing soy as well.

It is soy, but there is a soy free Earth Balance available now! Not really sure how widespread it's availability is yet!

I have soy-free Earth Balance in my refrigerator right now.

I had miso soup, baby arugula w/ fax oil and Goddess dressing and left over bulgur wheat that was really awesome

I meant flax oil. A glitch kept deleting most of my post everytime I tried to edit .

Nuts and seeds are little treats that can add some protein to your diet, but almost all the foods we eat contain protein and relatively speaking, we don't need a huge amount of protein in our diets. Veggies high in protein include peas (maybe around 16 grams protein in one cup cooked peas) and spinach...

Quinoa is a great source of protein, and it's easy to make it sweet, spicy, savory, etc. My recent favorite has been a cup of quinoa (I use my rice cooker, it's much easier than stove top) with a 1/2 cup of Trader Joe's "Soycotash" - edamame, corn, and red peppers. I top it off with hot sauce, and it's delicious, high in protein, and gives me a little kick when I'm feeling lazy or tired.

So far, homemade hummus on whole wheat crackers. About to clean out my fridge...it may be pot luck leftovers banquet so I can get some room back.
