Hey everyone I am new to the kind diet but I fell in love with a plant based diet through this amazing book! Here is my deliemma, I am going to be living out of a hotel room for the next two weeks all I have is one stove burner which is not very reliable, a microwave and refrigerator any ideas on what I should stock up on or quick easy reciepes!??? thanks so much!
I lived in a Homewood Suites (two burner stove, refrigerator, and micro) for a few weeks. I always made a batch of brown rice and lentils (with bay leaf, cubed diakon, carrots, and onions). I would just keep it in the fridge and eat off it for a few days. Also a can of black beans to go with the brown rice and chopped green onions. Other than that, lots of salad fixings. That is what worked for me.

All very good advice, just a couple ideas to add. If you want some ready made micro stuff Amy's organics has some vegan options to stock your freezer with. And don't forget good ol' PB&J on Ezekial bread! Hummus/babaghanouj and veggies or guacamole and veggies.
If you can find one not too pricey, you might get a crockpot or a rice cooker. So easy to steam or stew veggies and grains that way.
When our kitchen was ripped out for 2 1/2 months, I cooked every day with a crockpot, a rice cooker and an electric skillet or an outdoor grill. We survived, though a bit less sane at the end! ;o)
