Black Eyed Pea Croquette Question

I really want to make these tonight but I did not soak beans last night, will canned beans work instead?

Has anybody tried it?

i hvent tried it but they look fabulous! im sure that canned wuld work, i would just rinse them to get some of the excess sodium off.
let me know thow they are!!! :)

Im sure canned beans would be fine. I made this last week, using the dried beans, they came out well my husband quite liked them but I wasnt too keen on the flavour I found them a little dry I might try them again using other beans though.

So the canned beans did not work very well at all. I think there is too much moisture in them so they just fell apart in the oil. :(

You can also use the quick boil method if you forgot to soak the beans overnight. In a saucepan cover the dry beans with water and first bring it to a boil, then simmer on low for 1 hour and drain the excess water. Then use as directed in the recipe.

I've only done it with a whole bag of beans so not sure if the time amount would be less or not.

i made these this weekend and used dried beans...they work perfectly if you use dried beans!

It took me three tries to make the black eyed pea croquettes come out right. They were not mixed long enough in the food processor to hold their form. The mixture needs to look like the consistancy of cookie dough. They taste and look great!

mine fell apart as well when I used canned beans
