I had a lot of fun searching for these ingredients - burdock root - a new one to me , kabocha squash, - and lotus root? That was a challenge - finally found about 30 minutes from my home at an Asian market. The soup is good but I like to think of it as a "good for you soup" rather than a culinary party in my mouth. I like the way it tastes, however with as hard as it is to obtain some of the ingredients, I'll probably make the Dandelion, Bok choy Miso Soup again before I make the Kinpira. I did read that kinpira is good for digestion and hot flashes - i'm not flashin' yet (42) but will def. keep this in mind!
