Appetizer suggestions

I recently became a vegan and am having a party for my birthday in a couple of weeks. I am wondering if anyone has any suggestions for appetizers. I don't want to do a standard veggie platter and I want to show the nay sayers that vegan food is yummy. Any ideas would be fantastic.

stuffed mushrooms!! these are a hit everytime I throw a party:

20 ounces (or about 20 total) stuffing mushrooms
1 tablespoon olive oil
1 red pepper
1 green pepper
1 small yellow onion
1/2 red onion
1/4 cup dried cranberries
1/4 cup pecans
2-3 cloves fresh garlic, chopped
1 1/2 teaspoon dried oregano
salt and pepper to taste


Remove the stems from the mushrooms and chop. Then roughly chop the peppers and onions. Add the olive oil to a skillet over medium heat and add the garlic, mushroom stems, peppers and onions. Add the oregano, salt and pepper and saute for at least thirty minutes until caramelized slightly. Meanwhile, chop the pecans. During the last five minutes of cooking, add the pecans and cranberries. Then, add the mixture to a food processor and pulse until the mixture has combined into a paste. Preheat the oven to 400 degrees F and stuff the mushrooms with the filling. Place on an oiled cookie sheet. Bake for 20 minutes, or until the tops are slightly browned.

Double the recipe if serving more than 8-10 people. These go FAST!

I'm going to be in the same boat next month for my oldest daughter's birthday. It's finally decently warm here (Wisconsin) and all of my husband's family from out of state are coming. I dread her birthday party every year (because it's my husbands family smiley-wink.gif hee hee) and all of a sudden it hit me yesterday that I'm going to have to come up with lots of vegan food that everyone else is going to have to like! ACK! Typical party food around here are brats and hamburgers, so not happening!

So I will definitely be writing all these suggestions down too.

Darcy~ If we come up with something that's a hit I will post the recipe for you. My friend is looking into some recipes.

There's a seitan and herb stuffed mushroom recipe from "Vegan with a Vengeance" that is unbelievably good. I don't even like mushrooms but I'll wolf down the whole batch. If you have time to pick up that book I highly recommend it.

i'm goign ot try stuffing mushrooms wiht the artichoke dip from the book:)

The artichoke dip in the Kind Diet is A-M-A-Z-I-N-G!!! I have made it several times and the non-vegans could not stop eating it and were totally shocked that it was vegan. Mushrooms with that as the stuffing would be so good!

How about bruchetta, olives, sun dried toms, marinates mushrooms, lovely foccacia bread and other themed nibbly bits?
