i used arrowroot, worked out great. i also made it with apples once. softened them up a bit first, and added some cinnamon and a touch of maple sugar. i liked it better then the peaches, likely because the peaches were out of season and i used frozen ones.
I just bought all ingredients for this and another recipe but believe we left the book at whole foods! They havent found it yet but if anyone can help with the how-to part quick, it would save our dinner!!
