Tuna salad sandwhich (kinda)

I made this salad this week... SOOOO GOOD. I had it on whole wheat pita bread and it kept well in the fridge for several days. As I am trying to avoid the microwave it is a great lunch to bring to work.

I second this. A lot of prep work, but makes a ton, and is so worth it. Yum.

I agree the tuna salad sandwich is so good I made it for my parents non vegetarians and they LOVED it .

I just sat down with my first TKD tuna salad sandwich and wow, it's good. It did take some prep work, but I have so much leftover that I'm set for the next few days for lunch. After I combined all the ingredients, I smashed them up a little with a meat mallet...haha, glad I found something to useful to do with it :) Served it on hemp bread.

I was really surprised at how much I liked this recipe. Made enough for my husband and I to eat three meals.

This recipe turned out wonderfully! My first taste of tempeh and I'm definitely a fan of it now. I had to change a couple small things with the recipe: I used Apple Cider Vinegar instead of Umeboshi because I didn't have time to stop at Whole Foods. And I used Persian cucumber over the regular type, because I find regular cucumbers kinda gross and their skin is hard to eat.


It fell out of the sandwich almost completely so I think this would do better in a wrap. Still delicious though!

Page 246. I haven't tried it yet but I am going to the grocery today so the ingredients will be on my list.
