Need help transitioning dairy out of my diet.

Whole Foods carries Daiya now, so I tried it for the first time last week in TKD's artichoke dip. Yum. It melts, I like the consistency & it's soy-free. It's very oil-based though, so next time I'll probably add half as much to keep it from being too runny. Follow-Your-Heart mozzarella was surprisingly tasty. Of course, cheese alternatives are no where near as healthy as whole food replacements like Suzy suggests, so I only use them in moderation. I love avocado too--especially with the sauerkrat open-face--tahini on toast with jam is also good, nut & seed-based purees, hummus (VegMom, that grilled sandwich sounds awesome with the black beans), roasted squash kind of mashed can often coat pasta enough to not need sauce or "cheese". Does anyone have other good whole food suggestions? I've heard you can make raw 'cream cheese' from soaked sunflower seeds; anyone come across this recipe? Eventually, your body should detox & addiction/cravings won't be as strong...cheese is tricky, but I've found the closer I stick to whole foods the more & more my tastes & cravings change to healthier ones. My body seemed to reset once I changed my eating habits; now it knows what truly nourishes it, so I crave those things more. Good luck.

I always try to explain that to people when they say "Well don't you crave this or that"... NO.. not so much any more :-) But its hard to explain to those who haven't shifted.
As for the Grilled "cheese" a coworker gave me that recipe one day, and its been a hit ever since.
I recently made a Raw Lasagna, using Macadamia Nuts as my "cheese" base. I'm getting lots of good recipes from www.kristensraw.com and her books.
I LOVE CHEESE! Veganstore.com, veganessentials.com and cosmosveganshoppe.com all sell daiya and teese cheese. I haven't tried any of them yet as I haven't taken dairy out of my diet yet, but let me know what you think if you try it! :)
