We finally broke out the grill tonight. I brushed on homemade Italian dressing and steak seasoning and then grilled my mushroom steaks and red onion slices. They were so huge. I served them with a fresh salad and grilled pumpernickel bread. I am stuffed. But was sooooo delish. You just can't beat that first grilled taste for the spring.

Wow - that sounds good. Did you use Portabella Mushrooms?

That sounds amazing! I am in NYC and wish I had a grill/space for a grill. My spring favs on the grill are asparagus and skewered brussels sprouts with some lemon juice squeezed on them.

You should grill some fruit too, grilled pineapple is the best!

We do the same thing with grilled portobello mushrooms brushed with garlic, rosemary and olive oil, grilled red onion slices and grilled/roasted red peppers - layer them all on a bun with fresh basil leaves and garlic mayo (mix roasted garlic and a little lemon juice in with veganaise, its amazing!!!) YUM they are sooooo good......even my meat eating family members love these!
