Husband is having a work BBQ...

And the wives were asked to bring side dishes. They will provide the meat... Well I don't eat meat, duuh! So I need some suggestions as to what I can bring as an amazing side dish, but the main meal for myself!!! I was thinking about making the Eggplant Chana Masala from the book, but I'm not sure. Please help me out! Recipes or links would be well appreciated!!!!!!!!!!!

Some great picnic/bbq ideas: caponata (sweet'n'sour italian eggplant dip), texas caviar (black eyed peas and corn with spices), raw veggie platter, tempeh sloppy joes, paninis/muffaletas, creamed pea salad (use cashew cream)...

If you bring veggie kabobs, which I think is a great idea, be sure to take them off the grill yourself. I was at a BBQ and the person who removed the veggies put them on the same platter with the meat, juices, and blood!!! I couldn't even believe it! Of course I didn't eat them, wasted money, and prep time!

i would personally stay away from anything fancy and opt to bring a salad....maybe a pasta salad, an amazing mixed salad or a fruit salad...or all 3!
i enjoy bringing vegan items that EVERYONE eats, so they recognize its not so tricky to find vegan alternatives!

I really like this really simple chickpea salad that I make.
A large can of chickpeas (or cooked yourself), drained
sliced up red onions(about a whole small/medium onion, or however much you like), like small short slivers.
a few tablespoons of olive oil
1/4 cup lemon juice
chopped up parsley
salt and pepper to taste
chill in the fridge for a while till its all nice and cold. This is yummy and filling.

Also Quinoa with olive oil, lemon or balsamic vinegar, and sundried tomatos and basil is really good as a cold salad. Probably alicia's Quinoa w/ basil/pinenuts would be a good salad too.

Both of these are filling and have protien

Also bring some marinated asparagus to grill. (olive oil and lemon and salt and pepper is really good) They're so good, just lay 'em on the grill and they're really in season right now.
