Since the beginning of my kind journey, I have been intimidated by meat substitutes. I finally bucked up and tonight I made tempeh tacos for dinner and loved them! I bought the spicy flavored and added sautéed onions and bell pepper. I used whole wheat tortillas, cilantro, lettuce, and salsa and it was delish!
Good luck Crazy!!!I've been trying to buy one item that I haven't tried......last week it was spaghetti squash and I think next week I might try one of Alicia's recipes with Seitan. I am still having a difficult time giving up cheese completely so I might try to Almond or other vegan cheeses too. Syl
