So I'm entertaining for mother's day.. My mother and grandmother and daughter (and fiance and grandfather as well). This will be my first time entertaining, vegan, and with a full vegan menu.
So I was at target looking for a few things and it hit me. I should do a totally "green" Mother's Day. I made the theme "celebrating Mother Nature" as well as us Mothers ourselves! So I ran with it. I got "green" invitations made with 100% recycled fibers and on the invites I wrote something to the effect of, "Join me in a celebration that's as kind to Mother Nature is it is to our health!" and then wrote something about a delicious vegan menu so they'd be prepared for no meat. lol I also made it a brunch because I figured non-vegans would be less likely to want meat at brunch than dinner.
Anyway, then I got these cool reusable patterned bags at target and filled them with all kinds of natural and organic beauty products, hand soaps, notecards, and even a couple of things from Alicia Silverstone's line...Ecotools (all bought at target)! It was really fun and I felt so good about it because number one I think it's a really positive way of kinda introducing your family into your new life style, and also every girl loves a gift bag so it's a way of getting them excited about these products just as I am, and also letting them see how easy it is to pick these eco-friendly finds over the nasty -to-the-planet ones! I think they're really going to love it and I'm really excited. I had fun doing it!

Glad you guys liked the idea:) I'm actually having the brunch Sunday, too, so it hasn't happened yet. Just sent the invites out (which they got today and loved, even though this had already been set up verbally) and made the gift bags just so they're ready cuz it was fun and I'm impatient! lol
So I haven't totally decided on the menu yet, which I really need to do. I have some ideas. I think I'm just doing a soup...there's a good split pea that would be really cheap and easy, or maybe a squash..I'm not sure yet, and then a salad with a vinegarette, pear, dried cranberries and walnuts. then I think I'm going to do stuffed red bell peppers. I was thinking of doing the stuffed tomatoes Alicia posted, but my fiance doesn't like tomatoes and loves peppers, so I thought I'd do that instead. I'm going to change up the ingredents in the filling a little too though.
Then I'm going to do for sure phyllo-wrapped asparagus cuz everyone loves them, and put out like 3 different types of olives, and I think I'm going to do sweet potato fries served in paper cones (I think my grandpa will really like that!) and then maybe some hummus and pita chips and veggies. Not sure. That all kinda doesn't go together so I'm still working out the details! lol
My grandma and mother are diabetic, so no dessert, and even my current menu has a lot of carbs. But the carbs I serve will be complex carbs at least.
Well let me know how it goes for you guys. I'm totally excited about it! :) Let me know what you guys serve too. I'm such a new vegan I haven't really tried out any recipes good enough to entertain with, so I'm left to make the things I made before that I know are good and just throw them together in one big meal! lol
