I love Chickpea Nuts!!!

I'm a grazer. I don't eat big meals. I like to eat small meals all day. I love Kale Chips. I recently found a recipe for Chickpea Nuts and they are sssooo good. You use canned organice chickpeas (aka garbanzo beans). I rinse them and dry them completely. Then, I put them on a baking sheet and spray with my olive oil sprayer. Stir them around to get them good and coated. Sprinkle with 1/4 teaspoon salt. Bake in over at 375 degrees for an hour or until they turn deep golden brown. I stir them ever so often so they bake evenly. They are so crunchy and yummy!!!

Ooh I've tried these with a bit of other spices like cayenne pepper and cumin...THey are so good on salads, or alone!

thanks for posting this. i recently opened a can of chick peas and had some vague memory of reading a recipe similar to yours some time ago. but since i couldn't remember it completely, i just sprinkled those buggers on my salad plain which was tasty but...i am definitely going to try the toasted nut version. thanks!

These sound great! Do you think you could just put olive oil on and stir to coat. I don't have an oil spray can

I use different oils. My favorite is sunflower oil. I toss mine to coat in a bit of sea salt and nutritional yeast and make cheesey roasted chick peas. I only bake mine for 30 minutes at 375. Soo yummy! I'm so going to try to make spicey roasted chick peas, that sounds really good and I bet I can get my hubby to try em.

I eat them as a snack by themselves and also sprinkle them on salad and use them as "croutons" in soups.

Jools...You can spread a thin layer of oil on the baking sheet and then roll them around. I love Corn Nuts, which is why I bake them for an hour. I store them in a glass airproof container and they stay good for days. I carry them to school to snack on.
