So I found a recipe to make seitan from vital wheat gluten, spices and broth and it turned out terrible! I don't know if I simmered it in the broth for too long (45 minutes) but it was really spongy and looked like diced dog food. Yuck! Anyone have help making seitan from scratch? I can't find it in the stores here, but I would like to attempt to make it again. Thanks in advance!Alex
