In addition to my seitan dinner disaster last night, I attempted to make the black eyed pea croquettes. They wouldn't stick together! When I tried flipping them in the oil, they fell apart. Any suggestions? I think I may have processed the beans too much so they were mushy. Has anyone had luck with this dish?
Yup made them a few nights ago. Total bust!! They fell apart. The outside got a bit crispy and the inside was mushy. We then tried to make the rest into the ufo ashapes and dredge them in whole wheat flour. Looked like it was going to work like a charm but no dice. I am assuming that yours as well as mine were mixed too much. Bummer huh? They looked so good in the picture!
