Instead of buying canned beans does anybody cook their own beans?

I love cooking my own beans! That way I know what is being put into it. I usually cook 3 different types at a time. Just so I have enough for the week. It does takes some time to soak and cook but in the end it is worth it!

I love cooking mine in the crockpot.
I usually do a fast soak. I rinse the beans and remove any rocks. Then I put them in a large skillet. I add water until the beans are covered by 1-2 inches. Bring the whole thing to boil, then immediately turn it off and remove from heat, cover and let it sit 1 hour.
Then dump the water and rinse the beans. I then put them in my crockpot with the kombu and a little onion, cover with fresh water, about an inch or two, then cook on low for 5-7 hours. Add salt after the beans are done, or they won't get tender.
I often cook them overnight, so they are ready the next day. I'll do the quick soak while cooking dinner and turn the crockpot on before bed. That way I can have them in my lunch if I want to.
This works with any bean. If there is extra liquid when the beans are done, you simple drain it off. I made some pinto beans today.
