Vegan Egg Choices?

Hey everyone,


I learned how to cook when I had my first child, (who is now 13) and a lot of recipes relied on casseroles (to hide the vegees) and quiches.. As a result, my 6 foot 2, thirteen year old is addicted to eggs. As much as I am impressed that he will get up and make himself a 12 egg omelete a lot of days of the week, ( and he loves the quiche I used to make, as I would hide broccoli, aspargus, and other green stuff in there he would not other wise eat) with my new found insight, I am really concerned about his health, and looking for a healthy vegan egg substitue alternative.


I've been many websites, but honestly, tell me, what has worked for you in terms of Egg substitutes while remaining Vegan. I've seen tofu alternatives, using bananas in baking, etc..


What REALLY works.... I am eager to hear.


I am bringing the family on board, (slowly)

don't buy eggs :-)



I did this with my milk guzzling daughter, I stopped buying milk and now she guzzles rice milk.



I can't think of an alternative for eggs...I would be surprised if there was one.

As far as just plain EATING eggs, I'm not sure, although I have seen egg substitutes in the health food store. However, I can attest that bananas and apple sauce really does work in baking, and I think makes the dish even better (I like the fudgier taste better than the cakiness, so it works for me). And I've made a tofu-scramble breakfast burrito, which was also good. As long as you use the right seasoning, you can make it work. :)

Even though your post is about 1 year old: I use silken tofu in quiches, it works perfectly! I recently found a recipe and now I am quiche-addicted smiley-laughing.gif


for baking I use bananas, apple sauce or soy-flour (1tbsp soy-flour + 2 tbsp water replaces 1 egg)

I used egg replacer for most baking, or flax seeds.


My son, who is still not totally vegan, LOVES EGGS!


He still likes them on occasion, but also loves tofu scramble burritos.


Mine usually include tofu, crumbled, sauted garlic, onions, and papers, turmeric and cumin, salt and paper. I sometimes add other veggies, and/or veggie sausage. I cook it all, then wrap it up!


I make a bunch of them and freeze them so he can just pop them in the microwave.

I make "eggless salad" also. Add anything you normally like in egg salad, replacing eggs with crumbled tofu, (remember to drain off excess liquid) and mayo with veganaise. Delish!

Oh, and turmeric give it more of an egg coloring, which seems to make some difference to my kid.

Hey there. What I've found REALLY works is applesauce in baking OR a really easy egg replacer for pancakes/baking which is 1 Tbls apple cider vinegar and 1 tsp baking soda = 1 egg.


As far as quiches go, I've yet to try silken tofu. The only quiche I've tried is this one and we love it, no egg replacer involved:

Tofu scrambled works as a replacement for scrambled eggs. But other than that i cant think of any alternative minus using tofu or egg replacer(but this is used as a binder rather than to add to a salad etc).


Once you broaden your recipes you wont miss the eggs after a while.
