Vegan Egg Choices?

Ellie Thomas, that idea of making some burritos, freezing them, and having them able to be microwaved is an awesome idea! I didn't even think of that, but I definantly am going to try that!
For egg replacers in baking you can use Chia seed (my fave), flax seed, apple sauce, banana, or egg replacer. Someone told me you can use potato too, but I haven't tried it (Mashed potato with the boiling water).

For quiche - veganomicon has a good one and beans is used to replace the eggs. Tofu also works.
If you soak flax or chia seeds for a while (until it is gelatinous) it is a great binding agent for "burger" mixes, like black bean or beet.
I haven't tried Ener-G egg replacer. Has anyone? What is it good for, just baking?
I'd have to agree that finding a good tofu-based scramble is probably the way to go. If your son isn't on board with giving up eggs altogether, then just negotiate a partial replacement over time. I was able to go "cold tofurkey"
on meat and dairy, but my husband can't, so he's just cutting back and is already seeing the benefits. I'm sure over time I'll be able to get him down to minimal consumption.
I use Ener-G egg replacer when I bake. I used it in pancakes, belgium waffles, french toast, etc.
I use applesauce when I make chocolate chip cookies, some cakes etc.
