Can I substitute Rice Vinegar for Umeboshi if I can't find Umeboshi? I'm looking to make the bok choy recipe.

Well of course! It's basically just a style of eating the bok choy and less of a recipe. And it goes well with the fried rice, which I just gobbled down for lunch today. :)
