Kale chips question...

I was wondering if baking kale to make kale chips takes away their nutritional benefit???

In a nut shell....not really.


You end up eating more of a food if its cooked because its easier to eat and the volume shrinks. Especially yummy kale chips lol :)


So the small amount of nutrients lost is made up for by naturally eating more.


Also from a macrobiotic perspective it increases the digestability and absorbtion of the "energy" of the food.
