cooked up a simple masterpiece yesterday and wanted to share:
sliced up 5 half-inch rounds of pre-made polenta you find in the health food store, though making your own would be awesome, too. baked them on a thin layer of olive oil in the toaster-oven (turning once), though you could easily pan-fry them, too.
on the stove-top, i sauteed in olive oil about 1/3 a leek (both green and white part) for a minute or two, then added about 1/3 a sweet potato cut into wide matchsticks. i think i also added a leftover broccoli stem i happened to find in the fridge, peeled it and sliced thinly. mushrooms would have been good, too, but i was out. cook, stir, add water to steam a bit, when it cooks off, add a little more, add a sprinkle of shoyu, keep sauteeing. when the leeks and sweet potatoes get all melty and soft, then i added some thinly sliced collard greens (about 4 leaves, stems removed) and cook for a few more minutes.
arrange polenta circles on a plate, pile on veggies, and sprinkle with toasted pumpkin seeds. yum! so good, so easy, so satisfying.
