My favorite lunch at work...

I have not quite grown tired of it yet... Lettuce (from my garden) & tomato sandwiches on sprouted sesame (thank you idreamoftahini) bready, lightly toasted, with some Annies horseradish mustard. I typically have that with some healthy chips and fresh fruit (changes little bit each day).


SOOOO Good and easy! tomorrow I am adding avacado to the sandwich.


YUM.

i work at Ihop so even though they are very flexible in the kitchen i usually bring lunch and snackfrom home. today it was leftover brown rice, black beans with ezekial corn tortillas romaine lettuce salsa and chopped onions.

I've been making this wrap with cooked green lentils, avocado, greens, onions, sunflower seeds, with some vegenaise (mixed with a little ketchup). It's so good! You can pretty much add any veggies you have on hand, but the lentils make it nice and filling.

can NOT stop eating a mixture of brown and wild rice topped w/ steamed kale seasond w/ cajun seasoning sprinkled w/shoyu roasted sunflower seeds :)

leftovers... a grain and whatever was made for dinner the night before... tofu, tempeh, seitan, veg, beans.. whatevers clever.

Quinoa and whatever veggies are on hand. Avocado is a must. Tomato, radish, peppers, onion. Top all of it with a scoch of lemon juice and shoyu. YUM!

i often have my lunch with kimbap (a traditional dish in Korea) which i prepared at home. It provide enough energy for me and my colleges say that it looks beautiful
