My favorite lunch at work...

I've been eating a HUGE chopped salad with lettuce, shredded carrot, cucumber, napa cabbage, chick peas, quinoa, avocado, olive oil, lemon juice, pumpkin seeds, ground flax seeds and the pies de resistnace..... avocado!!
This has been super yummy for days :-)
Tomorrow I am going to have a Kabocha/Sundried Tomato homemade soup and a "Dharma's Kale Salad" from Kimberly Snyder's book!
Avocado tomato sandwich: avocado + tomato slices + sea salt
I love some brown rice and either lentils or beans. Top these with some gomashio or soy sauce...yum!
I usually have something like falafel, houmous, lettuce, onion, cucumber, red pepper and alfalfa in a nice wholegrain tortilla... Yummy! :)

I always bring either leftover soup (Sunday I make soup that I can either take to lunch that week or freeze for an easy dinner night) or a salad. Today I have coconut chickpea curry soup. Oh, and I always bring a bit of dark chocolate, too... :)
Today I had a huge salad with tomatoes, avocado, chickpeas, lettuce and radishes. I had a vegetable soup the other day for lunch and was starving but it was delicious so I'm going to have some vegetable soup and a big sandwich tomorrow and see how that fares!
