Hey guys :)
I love making beans the long way....however, they always come out broken and kinda mushed. I know I have to be doing something wrong. I usually soak them overnight, drain the soaking water, add new water, then cook til tender. What am I missing?

mine do too sometimes if i let them cook a bit too long . But i dont mind, i kinda like them like that , its preferable to them not being cooked enough or outta a can !
agreed! I love them either way...I could eat them at every meal (especially black beans) YUM
I have to be careful how many I eat or it's gas city hahahaha

do you mean black soy beans ? i tried those once, i seem to rememeber in TKD Alicia says to dry roast them a bit before boiling them and i burn mine a bit and subsequently they tasted burnt. Not nice ! How do you do them ?! Just soak and boil ?
I have never tried black soybeans but have been meaning to get some :) However, the regular black beans I make I just soak and boil....
I'm relatively new to beans, so I've been working with canned... Is there anything else I should know before I switch over to the real deal? Just buy them and soak overnight, then boil? Do you soak them on your counter top or in the refrigerator? Cover them? Wow, who knew I was this bean ignorant! Any advice would be much appreciated...thanks!

I cannot say that I am an expert because I am still learning as well...however, my steps are:
-cover beans with water and stick in the fridge...either over night or while i am at work
-drain the soak water, then add more water for for cooking
-bring to boil and skim nasty stuff from the top (less gas)
-turn on low and cover and simmer till tender

you are so welcome! I still use canned beans in a pinch but dried ones really do taste better...wonder why that is.....
Good question. Probably the same reason that canned vegetables are blah too though. Preservatives, processing, they're old? I bet someone on here actually knows. Someone on here seems to actually know everything!
