My parents are the same way. basically it took them a long time to understand why i was a vegan, but now they're really good about it and always cook me something i can eat when i'm over. do your research find balenced foods you like and make them for yourself. also you can try to make things that are similar to what they are eating, but with meat replacements instead. like if they are having BBQ chicken you can have BBQ Tempeh, Tofu, Seitan, or even Gardien makes awesome BBQ Skewers and also plain "Chicken" you can add BBQ sauce to yourself.
