lately I have been having rice pasta with steamed collards and chopped advocado, I put olive oil and sea salt (the course chunky kind) on it all and its definitely savory! and quite yummy! I put it all into a cereal bowl to officially make it breakfast....

Stir-fried collards with shallots and chick peas. I crave this in the a.m. -- awesome protein, greens -- great energy in the morning. Make a big batch so you can serve it again as a side for dinner.

my stand-by is a tofu scramble. I saute mushrooms, add in some previously cooked kale which I always have in my fridge, crumble in a block of tofu, add some soy and put it all into a whole wheat tortilla! yummy

I've currently been on a Japanese kick for breakfast. Small mug of miso soup, then brown rice with steamed tofu and greens dressed with shoyu and a little wasabi.

I like slices of whole grain toast with mashed up avocado spread on top. I also sprinkle the shoyu toasted sunflower seeds on top! Delicious! And any opportunity to eat avocados should be taken, I always think. :)

Brianna, that sounds AMAZING, that I can totally do!! (The thing I have the most trouble with is breaking the "sweet for b'fast" thing). What's the "recipe" for your avocado spread? Thanks a million!

Hi Karen, sorry for the late reply!

I just mash up an avocado! Sometimes I sprinkle a little sea salt on it, but otherwise it's just simply avocado mashed up and spread right on the toast. Delicious! :)

I have been totally addicted to an instant whole grain cerial from Three Sisters that I found at Whole Foods. Cooks in 2 min... organic... has oats, flaxseed, barley, quinoa, and rye... so low in calories... awesome fiber... I put some fresh fruit in it - different everyday. Soooooo good for you and yum! The type is called "Plain Grain"... http://threesisterscereal.com/instant-oatmeal/
