hi debbie, what i like to do is sit down on sunday afternoon surrounded by all my cookbooks and magazines with a piece of paper and brainstorm. my 3 kids and husband are flirts who eat vegetarian 3 to 4 nights a week. so i always start with my menu first and then incorporate other items to make it good for everyone. for example: last night we had brown rice leftovers, panseared lemon basil zucchini, pinto beans and grass fed free pasture chicken. the rice and beans can be made in large batches and individually wrapped for the entire week. that will only knock you back 4 dollars tops. we are part of a csa so all our veggies are prepaid for before the season starts. we get loads of fresh in season veggies and herbs for 11 weeks for only $237. thats a bargin especially if you factor in that theyare all organic produce. our big budget drainer for our finances and the planet is the meat, whick i'm moving toward phasing out but until then we pay a hefty price for it. are yor kids old enough to make food choices or too little. i wish i had been more informed when they were smaller it would have been so much easier to start off the kind way.
