Fruity French Lentils

Made this tonight, and it is another winner! So light and refreshing! Since I live alone, it is a REAL struggle not to eat every bit of these dishes at one sitting. This one is eash to make and other than cooking the lentils, takes no time at all to assemble. Highly recommend it!
I've made this twice already in the month I've been vegan, and I love it! I thought it sounded so weird that I had to try it, and I'm glad I did. (I've only ever had lentils in savory dishes before this.) I used blueberries from the farmer's market and it was so yummy that I even ate it for breakfast yesterday! 
I was hesitant about this recipe to begin with, but I had all the ingrediants and figured I would give it a try. Surprisingly delicious! I used strawberries instead of raspberries since they were on sale and omitted the parsley since I never liked it too much- it turned out really well. Can't wait to try raspberries and other fruits next time. Might have to sprinkle on extra walnuts as well since I can't get enough of that crunch mixed with the other flavors.
I just adapted this recipe;during my summers farming in the Netherlands,I loved to have this for dinner.I would go pull some fresh carrots,string beans,fava beans and other vegetables from the garden and chop them up.Something crunchy with the lentils is a must!
Today I put in a whole apple,a lot of spinach,mint,and kale.Made a mustard olive oil vinagrette dressing,and it was delicious!
