Evaporated Milk

I have a vegetarian recipe that calls for evaporated milk. What would be a vegan alternative?

hmm.. maybe you could use something else of that kind of thick consistancy. Like a vegan creamer. Or maybe some powdered soy milk but prepare it so its not as watery. Don't know if those would work, just a thought. What are you making? :)

I am new at this and this is my first time to try and convert a vegetarian recipe to vegan. I found this in a WW magazine. It is Potato, Chard and Leek Gratin


Ingrediants - Red Potatoes, bay leaves, flour, salt, black pepper, nutmeg, chicken broth (I would sub with vegetable broth), evaporated milk (sub with ?), butter (use earth balance), leek, swiss chard, whole wheat vegan bread, and olive oil.


Any suggestions on the swaps are appreciated.

You could also just cook the soymilk until reduced by half, ie. simmer 2 cups until 1 cup has evaporated and you have a concentrated one cup left. That's all they do with regular milk to make it evaporated milk. You're evaporating out some of the water content. Good luck! I'm sure it will be yummy.
