succotash is one of my favorites. a mixture of corn, lima beans and shallots.... I usually saute it in a couple tablespoons of vegetable stock and then brown a little bit of pastry whole wheat flour with earth butter on the stove. not too much butter. add browned flour to succotash... then add more stock and let stock thicken.
I'll eat it with sliced tomatoes and a baked sweet potato. super yummy.
