smiley-undecided.gif O.k its been a month of flirting( eating little dairy and fish once a week). I had a piece of meat and of course got loose bowels like i had before kind diet! Now my appetite has dropped and i am hungry but not in mood to eat. I know i need to eat more greens but i am a private chef and when i get home i grill a veggie burger/or amy's frozen meal. Now i have been feed the family a dish i can eat...i made a wonderful lentil salad with roasted veggie and balsamic vinegar and olive oil. I started reading Skinny Bitch and feel like everything is bad for me sugar,flour,ect. I like to lose weight but its not happening! i feel good eating healthy but its so hard to find prepacked meals without feeling guilty...S.O.S

Lisa, I know how you feel... sometimes I get just plain tired of making healthy stuff all the time. And I agree with what you said about the Skinny Bitch book. Good recipes, but it does have more sugar and processed stuff than I'd like so I don't make stuff from it very regularly.


My aunt gave me a couple VERY easy and VERY good bean soup recipes that have been my go-to lately. I make a pot, and since I'm single and live alone, it lasts me about a week or so, eating every day for lunch. It's just a pound of Great Northern beans (white), 3 carrots (cut up), 3 celery stalks (cut up). Put it all in a pot, cover with water. Bring to a boil, then lower the heat and simmer for 3-4 hours, until the beans are soft. Just before it's done on the stove (10 min. or so), add salt and pepper to taste. That's it. It's SO good, it's amazing it's that easy. You can just keep the pot in the fridge and when it's meal time, put some in a smaller pot on the stove to heat up. Super quick and easy!!


My other go-to meal is udon noodles with whatever veggies I have. I LOVE noodles, and udon have a great (plain) flavor, I think. I'll usually add garlic gomashio to it for a more garlicky flavor. My favorite veggie right now is squash and zucchini. I'll cook some of that, and keep it in the fridge to add to the noodles for dinners. Simple, tastes great, and healthy. Can't beat it!


Hope you'd like either of those recipes, or find inspiration to make something more to your liking. It's tough to eat vegan and healthy all the time... but SO worth it!
