My New Favorite Breakfast

Sigh....I am sitting at the computer now, drinking tea in a state of bliss. Don't you just LOVE Sunday mornings? I do - at least lazy Sunday mornings like this.



After waking up to the sunshine, I read for an hour in bed, and then it was time to make a fabulous Sunday morning breakfast. I kind of made this one up as I went, and now it might be my favorite thing I've ever eaten for breakfast.

Cheesy Southwestern Tofu Scramble and Cinnamon Raisin Mochi Waffle with Peaches and Drizzled with Maple Syrup



SOOO GOOD! I found this frozen veggie mix at Dierbergs the other day with corn, black beans, peppers, tomatoes, and onions then added the tofu "eggs", tumeric, shoyu (soy sauce), nutritional yeast (gives the yellow egg color and full of B12), and Daiya cheese. It was PERFECTION. Then I found the cinnamon raisin mochi at Whole Foods yesterday and threw some of that in the waffle maker. It was just the right amount of sweetness.

I don't know how to really add pictures. I just copied and pasted from my blog. You could try typing out your response in a Word doc and then copy and paste to the forum - that might work. I was as suprised as you guys that the pictures showed up :)


Tania - I like it when I add some spices like cinnamon or add some maple syrup. The cinnamon raisin kind is really good on its own. Mochi is my favorite thing EVER!

My favorite breakfast is a healthy gluten free snacks which are very delicious and healthy too. Here are a list of some Gluten free snacks:

1.) Flourless Chocolate and nuts
2.)Macaroons
3.)Frozen Grapes
4.)Kale chips
5.)Baked cinnamon spice apple chips
6.)Roasted Curried Chickpeas
7.)Baked Sweet Potato Fries
8.)Roasted Sweet Potatoes with Curry

Looks fabulous! Great addition would be Kick Start breakfast patties. They are really good and go great with tofu scramble!
