Coffee Fudge Brownies Are Not Coming Out Right

Hey, I am new to the book as well as to this website. I've tried twice to make the Coffee Fudge Brownie recipes and it hasn't been working. The first time, I followed the ingredients exactly and poured into an 8x8 inch aluminum pan. I had them in there for almost 50 minutes and they would not bake. It came out soupy. The second time, I cut the liquid ingredients in half, a little bit better, but basically still the same result. Anyone else have this problem or know what I may be doing wrong? They tasted good anyway!

Lanore, the 8x8 pan recommended is half the size it is supposed to be...I baked for a second time in a larger, rectangular pyrex (9 x12?) and then I baked for an hour...way longer than the recipe called for. I think double, I don't have recipe in front of me...the first time i made it is overflowed in the oven and burned to the inside of the oven and i was so annoyed cleaning it for weeks afterwards....BUT when baked in a pan twice the size and baked twice as long it turned out great. They are yummy brownies and worth another go...i skip the frosting -- they don't need it! Good luck.

I made the peanut butter cups today and cut the earth balance in half, to 1/4 cup and used a cup of graham cracker crumbs and they came out perfectly.

I tried to make these the other day and Ihad the same problem. They filled the 8x8 pan to the top and then they took an hour to bake. They tasted good, but were dry around the edges and way moist in the middle. I thikn that the problem is the pan size for sure. The recipe says that it makes 12, and I should have noticed that and used a 9x13 pan. I am going to try it again in the bigger pan next time.


Also, I agree, they do not need the icing, although it is a nice treat if you are looking for something super rich! Let me know if anyone has better success with the larger pan before I get a chance to remake.

I am messing around with this recipe as well! I am exploring alternative sweeteners because the maple sugar/maple syrup are expensive!! Especially the syrup - $45.00 at my local health store.


Is it possible to sweeten this dish with organic apple sauce or apple juice?

Man I wish I woulda read this before I started baking.. My brownies have been in the over for an hour in a 9x9 baking dish and are still soupy too! I followed the recipe to a T what a bummer! I was gonna bring them to a Christmas party tonight and I cant have another go at it because I used all the maple sugar in that batch. I will try a bigger pan next time as well!
