My name is Justin Bean and I am very likable. Is there any possibility that you could reconsider? My friends are all really likable as well. They are black beans, white beans, red beans and even speckled.

If we can't temp you to reconsider how about lentils?

Thanks Justin Bean!!! I have to say I've been a picky eater my whole life much to my dismay. I have never met you or any of your friends! I guess I can say I'm shy.

I will have to force myself to get out & introduce myself. = )

I will admit I was afraid of any beans that weren't in Chili before being veggie, since then have I found that I really like black beans in mexican dishes and navy beans or chickpeas in soup. Sometimes I stuggle with the texture because it can be overwhelming. Have you tried hummus? I love that stuff! Lentil and Split Pea soup are my favorites too! Give 'em a try.

I really like this Split Pea Soup from the Vegan Table: http://www.thedailygreen.com/healthy-eating/recipes/vegan-split-pea-soup

Have you tried lentils? They are nutritional powerhouses, take less time to cook than beans, and are delicious! Green, brown and French lentils are firmer and can be used in soups, salads, or on their own. Red lentils break apart when cooked. Try them in dals & soup.

I reccomend The Urban Vegan cookbook. There are several yummy bean recipes in this book. I love the Sandwich Mousse, which uses pink beans. The Tuscan Braised beans are delightful, and use canelloni beans.

Now that I've been eating more beans, I find myself craving plain cooked azuki beans. I almost hate to use them in a stew! Find a few ways of preparing them that you find appealing. Like anything, just give yourself time to adjust.
