What Did You Eat for Lunch Today?

I can never think of simple, satisfying, low cal vegan lunch ideas! What do you guys eat for lunch?

I'm going to be all promotional here but I love to blog about things I actually eat so don't mind me. I love making a cous-cous 'risotto' that has two ingredients (http://fancyfoodieonthefly.tumblr.com/post/1227955211/recipe-cous-cous-risotto) that's so easy I make it in the mornings before getting dressed, vegan chili served over some brown rice (http://fancyfoodieonthefly.tumblr.com/post/984181086/recipe-veggie-4-bean-chili), or cornbread and borcsht (http://fancyfoodieonthefly.tumblr.com/post/922499710/quick-borscht-and-cornbread).



Some other things I love to do are pitas stuffed with peppers, onions and black beans; yummy cualiflower quinoa (from Urban Vegan's book - I can type it up if you want it!), a cornbread-rice-chilli pie slice, a mushroom lentil pilaf (I can type up either of these if you want!), a nice bowl of the kale-mango salad from Aarti's Parti (http://www.foodnetwork.com/food/cda/recipe_print/0,1946,FOOD_9936_489007_RECIPE-PRINT-FULL-PAGE-FORMATTER,00.html), and so many more. I love to do leftovers but if I need to make something quick I just grab a strip of something gardein, a quick salad and some grain in 1/2 cup servings each and go!

I also love couscous mixed with just about anything or indeed quinoa. I love hummus so I use it a lot in sandwiches - hummus and roasted red pepper is a good one. Soups are fantastic, low cal/fat and very filling - we often have soup and a sandwich for lunch. Also, baked potatoes/sweet potatoes topped with whatever you fancy are awesome. They take about 40mins in the oven (I prick them all over, rub with olive oil and sprinkle with salt and pepper) but again you could easily make a few at time and just heat them up as you need them. Tortilla pizzas are so quick - double them up, spread a little tomato puree on the base and top with with whatever veg is in you fridge. Bake for 10-12mins in a hot oven. I love bean salads - toss through spring onions, peppers, sweetcorn etc and use a lemon mustard dressing (leave out the oil if your really worried about fat content).


Today I had roasted red pepper hummus with pitta because we were out shopping and didn't have time to prepare anything. We also had baked beans on toast for breakfast, which is pretty filling. Beans on toast is a favourite lunchtime meal here in the UK - not to be confused with boston baked beans although similar - when I lived in the US we had to hunt down the right beans because otherwise it does taste a bit odd. Usually they are Heinz although there are some other great brands out there now. We like Heinz organic or Whole Earth. Now that's a lunch;)

Well today I ate at Golden Corral so I had a salad and tons of fried veggies and potatoes lol.


But normally, I cook healthier, I just wanted a treat today.


Lets see, yesterday's lunch was vegan chili over steamed greens and brown rice.


Tomorrows lunch is gonna be an ezekial sp? tortilla with avacado, tofurky, tomatoes, kale and mustard. with an apple

sauted cabbage, onion, red bell pepper, tomillo and garlic last night, at lunch today I filled a big green leaf lettuce leaf and topped it off with avacado and sprouts (ate 2 actually). Also, I cooked a crock pot of lentils with onion and tomato overnight and had a small bowl of that too. I am new to this life style change but it is something I want to do and need to do. I am really excited!!

I made a big pot of veggie & bean chili yesterday for my lunches all week. Mmm delish!! And I also made the Cornbread (muffins) from TKD to go along with it, and they turned out yummy even though I baked them a little bit too long! I didn't notice a baking time for muffins in the book, so I just had to wing it.

Today I had whol wheat angel hair and fake meatballs with marinara because I was just craving that. My usual lunch is beans and rice or bean tacos or brown rice and veggies.. sometimes I just love having a huge plate of roasted veggies.

Hey Tania! I tried googling a couple of the recipes you mentioned (as to not bother you) but i couldn't find them. Would you mind posting (or messaging) the recipies for the yummy cualiflower quinoa and the mushroom lentil pilaf? They sound amazing!!!
