This was my most delicious lunch! Sesame Ezekiel bread with a little vegan pesto, a roasted red pepper, mushrooms sauteed in olive oil and garlic and topped with a little shredded vegan mozzarella! I put it all under the broiler for few and then it was all melty and delicious! Yum!
For lunch I made a huge batch of roasted veggies! It included sweet potato, broccoli, carrots, and brussell sprouts. I tossed them in olive oil and seasoning salt and then baked them in the oven. While they were cooking I also had some edamame :)
