One of my favorites is a Chipotle veggie burrito, I get: black beans (no pintos, they are cooked w/ bacon), rice, fajita veggies, all the salsas (yum!), lettuce and guac. It is totally fantastic. Love the southwest food. AI will sometimes get a similar burrito from Qdoba.
For a basic, every day lunch, I usually have hummus and raw veggies in there somewhere or leftovers.
Leftover roasted beets and fennel with a really yummy tuscan white bean salad from The Vegan Table. I made it last night and since jason and the kids really didn't like the beets I'll be having them again tomorrow lol. That reminds me I need to set up the rice cooker!
